Beans is one meal almost every Nigerian child loved or loathed, either way you HAD to eat it growing up. As you’re all aware, I’m quirky and have been from when I was little so whenever my mum made beans at home, I always had to “re-cook” before I could eat it. This “re-cooking” involved something as little as adding a pinch of salt or water and letting it simmer for a bit, sounds ridiculous but this was my quirky way of accepting beans and ensuring it was worthy of my belly 😀
A few years later my mother started making “fried” beans so this recipe is MamaTimi’s special beans with a little personal tweak of course!
Today, there’s a different twist to #WednesdayYumday as I’ll be telling you how much it cost to make my special Beans.
My mum’s special take on the palm-oil Nigerian beans meal
Prep time: 15 minutes
Cooking time: 70-80 minutes
Total time: 95 minutes
This recipe should yield 5-6 servings or 3-4 depending on the bean loving scale of the people involved.
- 4 cups of African honey beans aka Ewa oloyin. Please pick to remove stones and any dirt, this was one of the reasons children hated beans, having to pick it! I got 2 Dericas for 700 naira so you can say I used about 300 naira worth of beans.
- 1 large smoked mackerel fish washed and lightly shredded( 500naira).
- 2 medium-sized onions chopped ( I got 5 medium ones for 100 naira so let’s say i spent 20 naira for this).
- Scotch bonnet pepper (Ata rodo) chopped finely. (I used 50 naira’s worth, you can use more or less depending on your hotness preference).
- 2 Bouillon cubes (I used Knorr chicken cubes, this should be about 20-30 naira, I had them at home so can’t really cost it).)
- 1 teaspoon curry (I had this at home but you can get the sachet for about 50naira or so).
- 1 teaspoon thyme (I had this at home but you can get the sachet for about 50naira or so).
- 1-2 cooking spoons Vegetable oil(You can get the power oil sachet for about 60naira). Palm oil is usually used to cook beans in Nigeria but for this recipe we are using vegetable oil
- Salt to taste (A small bag should be about 30-50naira or so).
- Cameroon pepper to taste.(Remember this is our QuirkytimsKitchen secret ingredient, so will feature on most meals).
- 2-3 spoons of ground crayfish (I had this at home so about 50-100 naira should be more than enough for this)
- Plantain 200 naira This will be fried and used as an accompaniment to the beans, what is beans without dodo??? Please if you don’t get anything on this list, get plantain!!!!!!
- Total cost : 1420 naira. Please note; I had most of the ingredients at home so it might also cost less if you do too.
- Add the beans into a medium-sized pot
- Add water to the pot and add half of the chopped onion.I forgot to measure but it should be enough to cover the beans and you can add more as you go ahead with the cooking. This process should take about 40-60mins but it can be less if you use a pressure pot. Just make sure that the beans is very soft.
- When beans is soft turn off heat and set aside.
- Place a non-stick pan/pot on medium heat.
- Add vegetable oil and the remaining chopped onions.
- Add the curry and thyme, chopped scotch bonnet pepper to the pan.
- Fry for 3-5 minutes and add half of the mackerel fish.
- Add one bullion cube.
- Allow to fry for another 2-3 minutes.
- Add the beans,Cameroon pepper and crayfish to the pot.
- Leave to cook for 3-5 minutes.
- Add the remaining mackerel fish and other half of Knorr cube.
- Simmer on low heat for another 2-3 minutes.
- Taste and adjust seasoning as required; salt, bouillon cubes etc.
- Cut the plantain to your preferred shape, heat up some oil in a pan and fry until golden brown
- Voila! you’re done!
- Serve and decorate to your taste, I didn’t serve this one so I don’t have photos of this but here’s a few images from when I made this last year.
